80% syrah, 20 % grenache
The volcanic basalt soil draws a mark on our land and gives the wine richness and complexity. The vineyard, characterized by low yields, is spread on southeast facing terraces to the Mediterranean Sea.
Daurion estate is situated close by the Mediterranean sea which brings a unique freshness.
WINEMAKING & AGEING:
Harvest realized at full maturity. The destemmed grapes macerate in tank for a long time. During the fermentation phase, the pigeage process is done manually everyday. This wine is aged in French oak barrels for 2 years before bottling. A deposit might appear in the bottle in the absence of filtration.
TASTING NOTES :
The deep black cherry color of this wine cannot hide its tastiness. Its intense nose offers aromas of little black fruits including black currant and blueberries. It is sweet and harmonious on the palate with very supple tannins, which gives balance to this vintage. It displays aromas of cherry and raspberry jam and a hint of cocoa in the finish.
PAIRING WINE & FOOD:
The mellow of the wine’s tannins pairs perfectly with a tender meat, with a strong flavor, like lamb, kebabs, or a filet mignon served rosé.
2 to 5 years at constant temperature between 10 to 12°C.
