The volcanic basalt soil draws a mark on our land and gives the wine richness and complexity. The vineyard, characterized by low yields, is spread on southeast facing terraces to the Mediterranean Sea
Daurion estate is situated close by the Mediterranean sea which brings a unique freshness.
WINEMAKING & AGEING:
Harvest made over night to take advantage of the nights’ freshness to preserve aromas. Once picked, the grapes macerate delicately at cold temperatures during three days to extract fruits and colors. During six days, the grapes are fermented at 25°C followed by a soft press. The wine is finally aged one part of it in stainless steel tanks and for the other part in French oak barrels.
Red wine with deep red color and shiny glints. The nose of this superb cuvee is intense, spiced with elegant aromas of black fruits and subtle touches of vanilla. The mouth is a mix of softness and expressiveness. It offers garrigues perfumes, melted tannins, perfect balance, and nice finish. Bottled at the Domaine.
PAIRING WINE & FOOD:
It is an easy wine to drink for various occasions, mainly with grilled red meats, a few dishes from our terroir and nice cheeses like “Saint-Nectaire” or even “Pelardon” from the Cevennes. Serving temperature is 14°- 18° C.
