Cuvée Céline  //  MERLOT IGP Pays d’Oc GRAPE VARIETY: 100% Merlot SOILS: The volcanic basalt soil draws a mark on our land and gives the wine richness and complexity. The vineyard, characterized by low yields, is spread on southeast facing terraces to the Mediterranean Sea CLIMATE: Daurion estate is situated close by the Mediterranean sea which brings a unique freshness. WINEMAKING & AGEING: Harvest made over night to take advantage of the nights’ freshness to preserve aromas. Once picked, the grapes macerate delicately at cold temperatures during three days to extract fruits and colors. During six days, the grapes are fermented at 25°C followed by a soft press. The wine is finally aged one part of it in stainless steel tanks and for the other part in French oak barrels. TASTING NOTES: Red wine with deep red color and shiny glints. The nose of this superb cuvee is intense, spiced with elegant aromas of black fruits and subtle touches of vanilla. The mouth is a mix of softness and expressiveness. It offers garrigues perfumes, melted tannins, perfect balance, and nice finish. Bottled at the Domaine. PAIRING WINE & FOOD: It is an easy wine to drink for various occasions, mainly with grilled red meats, a few dishes from our terroir and nice cheeses like “Saint-Nectaire” or even “Pelardon” from the Cevennes. The vineyard, characterized by low yields, is spread on southeast facing terraces to the Mediterranean Sea. CLIMATE: Daurion estate is situated close by the Mediterranean sea which brings a unique freshness. WINEMAKING & AGEING: Harvest realised at full maturity. The destemmed grapes macerate in tank for a long time. During the fermentation phase, the pigeage process is done manually everyday. This wine is aged in French oak barrels for more than 10 months before bottling. TASTING NOTES: This wine is stunning deep garnet in colour with dark purple highlights, which reveals the scent of little black fruits and ripe cherries, contrasting with a mentholated note. A smooth palate with silky tannins unveils aromas of liquorice, morello cherries, blackberries and multiple spices. Tasting this fine wine is an invitation to travel and to share. PAIRING WINE & FOOD: The elegance of Haut des Causses is appreciated on Mediterranean dishes, generous and sunny, with a tomato, eggplant, or pepper base, cooked with singing accents of the garrigue (thyme, rosemary). The vineyard, characterized by low yields, is spread on southeast facing terraces to the Mediterranean Sea. CLIMATE Daurion estate is situated close by the Mediterranean sea which brings a unique freshness. WINEMAKING & AGEING Harvest realized at full maturity. The destemmed grapes macerate in tank for a long time. During the fermentation phase, the pigeage process is done manually everyday This wine is aged 2 years in oak barrels and 1 year in bottle. A deposit might appear in the bottle in the absence of filtration. TASTING NOTES Intense garnet in color with a dark purple edge, this wine seduces with a ripe fruity aromatic made up of cherry, blackberry and a slight hint of violet. The smooth, jammy and elegant palate completes this wine. Although it appears supple, it is beautifully structured with nice long lasting aromas of morello cherries. PAIRING WINE & FOOD Gently cooked, roasted duck offers a tasty and tender flesh that allows our wine’s notes of black fruit to express themselves. The vineyard, characterized by low yields, is spread on southeast facing terraces to the Mediterranean Sea. CLIMATE: Daurion estate is situated close by the Mediterranean sea which brings a unique freshness. WINEMAKING & AGEING: Harvest realized at full maturity. The destemmed grapes macerate in tank for a long time. During the fermentation phase, the pigeage process is done manually everyday. This wine is aged in French oak barrels for 2 years before bottling. A deposit might appear in the bottle in the absence of filtration. TASTING NOTES :  The deep black cherry color of this wine cannot hide its tastiness. Its intense nose offers aromas of little black fruits including black currant and blueberries. It is sweet and harmonious on the palate with very supple tannins, which gives balance to this vintage. It displays aromas of cherry and raspberry jam and a hint of cocoa in the finish. PAIRING WINE & FOOD: The mellow of the wine’s tannins pairs perfectly with a tender meat, with a strong flavor, like lamb, kebabs, or a filet mignon served rosé.
